It is my hope to lovingly share my passion for healthy WFPB eating and form a community to share information, foster respectful discussion and explore the possibilities.
My Story:
In 2011 my husband and I attended the documentary Forks over Knives at our local movie theater. Walking home, hand in hand, we decided to embark on the odyssey we find ourselves on today; eating, cooking and exploring ways to share the growing body of evidence that a WFPB diet has been the single biggest positive life event we have experienced to date.
My husband was diagnosed with ulcerative colitis in 1988. He was on meds for over 28 years; 12 pills per day of nasty sulfa drugs; brief periods of steroids during flare-ups; all with some pretty harsh side effects. In 2016 he went off all his meds for the UC. He was later diagnosed with inflammatory arthritis in his feet and also as of one year ago he is no longer taking meds for this condition. He still struggles with lapses of inflammation mostly in his feet, but is hopeful that through eating, exercise, and mental awareness, he will continue to improve.
Throughout my life, I have constantly struggled with an abundance of pesky pounds and osteoarthritis in my hands. To date, I have lost 50 pounds and no longer suffer painful hand episodes and ride my bike for miles (I’ve done a century ride!).
I believe the stool we need to proudly perch ourselves on is threefold: WFPB eating, a comprehensive exercise/movement program and a mental awareness that we are responsible for our own wellbeing and happiness. We are incredible creatures, capable of great things!
